3 Healthy Dinner Recipes - Clean Eating Inspiration


We all know how much diet contributes to our overall health where we are quite literally what we eat since it fuels the cell growth in our body. 


So what we have for dinner is actually quite important and as someone who LOVES food, balancing taste with health is an ongoing mission. Here are three filling and nourishing dinner recipes to keep you on track for your clean eating. They are also all vegetarian so the perfect choice when you want a meat free meal, otherwise you can always add your favourite protein to any of these dishes. 

1. Roast Vegetable Buddah Bowl
This is the perfect option when you are craving a warm and hearty meal full of veggies and good fats. Roast up some pumpkin, red onion, eggplant and zucchini with your favourite spices (a touch of cinnamon is surprisingly great). Give yourself permission to fill up on a half an avocado and dress with tahini for a creamy yet healthy finish. Service with quinoa and sauteed kale for some added protein. 

2. Vietnamese Spring Rolls
These are SO freaking good. They are pretty much raw so a great refreshing and light dinner. Mix up a rich satay peanut sauce for some healthy fats. You can fill your spring rolls with a mixture of veggies like avocado, cucumber, carrot, cabbage and pretty much anything else. Also packing these full of herbs like coriander and parsley takes it to the next level. 

A good curry is one of my favourite dinner recipes in Winter and it doesn't have to be unhealthy! While a lot of curries are full of cream and butter, you can swap these out for the healthier alternative of coconut cream. This healthy fat is treated by the body differently to that of dairy products and it tastes amazing. Add as many vegetables as you like to get your vitamins / minerals in and lentils are a fantastic source of protein. This is a filling, satisfying and seriously healthy dinner idea.
