When the sun is shining until 7:30pm and outside feels like a sauna, you may find yourself wanting to eat a lot lighter than usual.
At least, that has definitely been me this Summer! I have been craving fresh and nourishing foods on the lighter side, with a focus on veggie packed vegetarian meals or the occasional fish. In this post I’m counting down my top four dinner recipes for this time of year.

San Choy Bow
This Asian favourite is a lightweight way to enjoy a rich and delicious filling without the heaviness of rice. Using cos lettuce as wraps for a veggie packed filling gets in your vitamins, minerals and fibre. Chilli flakes, hoisin sauce and siracha add plentiful flavour and this low carb dinner is sure to fill you up.
Grilled Lime Salmon with Avocado-Mango Salsa And Coconut Rice
All the goodness and omega-3’s of salmon with the refreshing zing of lime is a lighter way to enjoy fish. In the Winter I would usually opt for a garlic butter but the addition of a mango salsa instead injects the flavour of Summer into this dish. Pair with some creamy coconut rice and you have the perfect tropical dinner packed full of flavour.
Cashew Crunch Salad with Sesame Dressing
Whoever said salads are boring never looked on Pinterest for inspiration. Seriously, I have found some of the most incredible salads recently that I would choose over a burger any day. This one features a satisfying crunch and wholesome creaminess coming from great protein sources – cashews and sesame seeds.
Spicy Sockeye Salmon Poke Bowls
Who else loves a good spicy sashimi? Pair raw salmon with other sushi favourites like edamame, rice with sesame seeds and Asian salad for a wholesome yet light dinner recipe. I always feel like the epitome of health once I’ve finished a big bowl of lean protein and veggies so this is perfect for Summer.
